Vegetables are the edible parts of a plant, including roots, tubers, bulbs, stems, leaves, or flowers. Seeds and fruits are not included in the biological vegetable category. Veggies include foods like the tomato, gren beans, beets, potatoes, onions, asparagus, spinach, and broccoli or cauliflower. Some vegetables are in fact biological fruits, or not vegetables at all but because people have historically considered them to be veggies. These include foods like tomatoes, eggplants, bell peppers and mushrooms. Mushrooms technically aren’t even plants but fungus that lives off plant matter.
Vegetables may be consumed raw or cooked and can be prepared in a variety of ways for both meals and snacks. Consumption of fruits and vegetables may help lower the risk of heart diseases and type 2 diabetes and may also provide protection against some cancers, bone loss and formation of kidney stones.
